There are no references to bakers prior to the trade directories published in 1857, although it is likely that the baker listed that year had been established several years before. Prior to this time many people in Somercotes would have had their own bread ovens, built into part of the kitchen range, or would have shared a communal oven for a nominal fee. Flour would have been in plentiful supply, and was one of main staple foods, as it had been for many centuries.
Although not many flour dealers are listed, most grocers and general stores would have sold flour and yeast for baking. Local independent bakers still trade, but they are now much fewer in number.
A confectioner may sell just sweets and other similar items, but the term also refers to baker’s confectionery, which is principally the baking of cakes and sweet pastries. The trade directories do not generally distinguish between the two definitions, other than sometimes listing the term “confectioner and pastry cooks”, therefore this listing will include both “sweet shops” and “cake shops”.
